Vegetable Coconut Curry Pilaf


  • 2 large mangos, peeled, pitted, and cut into cubes
  • 1 ½-2 cups of plain full-fat yogurt
  • 2-3 tablespoons agave syrup or honey
  • Pinch of salt
  • Pinch of cardamom (optional)
  • Mint for garnish


  1. Place all the ingredients in a blender and blend on high speed until smooth (add more yogurt if mix is too thick).
  2. Pour lassi into cups and refrigerate for 15-30 minutes.
  3. Top with mint and serve.
