Healthy Steel Cut Oatmeal Frozen Breakfast

Steel-Cut Oatmeal

  • 2 cups plain greek yogurt
  • 2 teaspoons vanilla extract
  • 4 tablespoons maple syrup (organic if possible)
  • 1 teaspoon fresh lemon juice
  • 1 cup fresh or frozen blueberries

  1. Place the greek yogurt, maple syrup, vanilla, and lemon juice in a bowl and mix well. Then pour in your ice cream machine and freeze according to manufacturer’s instructions.
  2. While your ice cream machine is working its magic, place the blueberries in a blender or food processor and pulse until pureed.
  3. When the frozen yogurt is ready to go, pour the blueberry puree on top and using a spatula, fold in a few times forming swirls (don’t over mix or the whole thing will go purple).
  4. Serve immediately or place in your freezer to store.
