Blueberry Swirl Frozen Greek Yogurt
Warning: if you’re monitoring portion control, this one’s tricky as you’ll want a heaping portion. But don’t worry, this fresh take on froyo is a great source of calcium and antioxidants.

Ingredients
- 2 cups plain greek yogurt
- 2 teaspoons vanilla extract
- 4 tablespoons maple syrup (organic if possible)
- 1 teaspoon fresh lemon juice
- 1 cup fresh or frozen blueberries
Instructions
- Place the greek yogurt, maple syrup, vanilla, and lemon juice in a bowl and mix well. Then pour in your ice cream machine and freeze according to manufacturer’s instructions.
- While your ice cream machine is working its magic, place the blueberries in a blender or food processor and pulse until pureed.
- When the frozen yogurt is ready to go, pour the blueberry puree on top and using a spatula, fold in a few times forming swirls (don’t over mix or the whole thing will go purple).
- Serve immediately or place in your freezer to store.
