Cauliflower: The Most Versatile Veggie?

Cauliflower is one of the most underrated veggies in the world (according to my own unofficial study). Most people don’t realize all the amazing and delicious ways you can eat cauliflower. Dip it, roast it, steam it, fry it… the possibilities are virtually endless, especially when you consider that it’s often used to make a vegan version of Buffalo chicken wings (yes I’ve tried it and yes, it’s delicious).

Why is Cauliflower Good?

Hailing from the cruciferous family alongside broccoli, cabbage and bok choy, cauliflower packs tons of nutrition into its white florets. It’s an excellent source of vitamin C, vitamin K and many B-complex vitamins. It’s also a good source of manganese, copper, iron, calcium and potassium. Bonus: cauliflower delivers all of this goodness with very low calories and fat!

How to Eat Cauliflower

 One of my personal favorite ways to eat cauliflower comes from Lebanese cuisine. The florets are lightly fried and then dipped in a lemon and garlic infused tahini sauce. And then there’s that Buffalo wings version I spoke about earlier. Whole Foods has a no-brainer recipe if you want to throw that one into the mix at your next football-watching snackfest. Here are some more delicious ways you can get more cauliflower into your diet:

  • Roast cauliflower with spices of your choice then puree for thick and creamy soups, dips or pasta sauces, like this Cauliflower Alfredo
  • Slice cauliflower into thick ‘steaks’, season and grill, like this excellent looking recipe for Grilled Chipotle Lime Cauliflower Steaks
  • Try it in our Tandoori-Inspired Spiced Chicken entrée
  • Use it as a low-calorie substitute for rice by pulverizing it to bits in a food processor or fancy blender, then bake or sauté (try this Cauliflower Fried Rice recipe )
