Cucumber Margarita
Shake things up with this refreshing summer favorite (not as easy to say when you’ve had a couple…don’t judge–we needed to test them to make sure they were good).
Ingredients:
- 1 cup sugar
- 1 cup water
- 1/2 English cucumber, peeled, seeds removed
- 1 cup tequila blanco
- 1/2 cup fresh lime juice
- 1/2 cup fresh lemon juice
- 1/4 cup triple sec
- Lots of ice
- Kosher or coarse sea salt and a lime wedge to rim glasses
- Lime and cucumber slices to garnish
Method:
- Place the sugar and water in a pan over medium heat. Simmer until sugar completely dissolves (about 5 minutes). Remove from heat and leave aside to cool.
- When the syrup is warm to the touch, place it in a blender with the cucumber and blend until smooth (about 2 minutes). Strain liquid using a fine mesh and squeeze the pulp using a spoon so you get every drop of it. Place cucumber syrup in the fridge until cold.
- In a blender place a handful of ice, tequila, lime juice, lemon juice, triple sec, and 1/3 cup of cucumber syrup. Blend and add more ice until it’s slushy but still pourable. Taste and if needed adjust sweetness by adding more syrup.
- Rim serving glasses by running the lime wedge around the edge of the glass and dip into kosher salt.
- Pour margarita in salted glasses and garnish with cucumber and lime slices. Makes 4
Don’t be afraid to play with the quantities a little until you get a flavor that perks up your taste buds. If you find yourself puckish, pair one (or two) of these with your favorite spicy Luvo entrée!
