Cucumber Margarita

Shake things up with this refreshing summer favorite (not as easy to say when you’ve had a couple…don’t judge–we needed to test them to make sure they were good).

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 1/2 English cucumber, peeled, seeds removed
  • 1 cup tequila blanco
  • 1/2 cup fresh lime juice
  • 1/2 cup fresh lemon juice
  • 1/4 cup triple sec
  • Lots of ice
  • Kosher or coarse sea salt and a lime wedge to rim glasses
  • Lime and cucumber slices to garnish

Method:

  1. Place the sugar and water in a pan over medium heat. Simmer until sugar completely dissolves (about 5 minutes). Remove from heat and leave aside to cool.
  2. When the syrup is warm to the touch, place it in a blender with the cucumber and blend until smooth (about 2 minutes). Strain liquid using a fine mesh and squeeze the pulp using a spoon so you get every drop of it. Place cucumber syrup in the fridge until cold.
  3. In a blender place a handful of ice, tequila, lime juice, lemon juice, triple sec, and 1/3 cup of cucumber syrup. Blend and add more ice until it’s slushy but still pourable. Taste and if needed adjust sweetness by adding more syrup.
  4. Rim serving glasses by running the lime wedge around the edge of the glass and dip into kosher salt.
  5. Pour margarita in salted glasses and garnish with cucumber and lime slices. Makes 4

Don’t be afraid to play with the quantities a little until you get a flavor that perks up your taste buds. If you find yourself puckish, pair one (or two) of these with your favorite spicy Luvo entrée!
