Halloween Party Pleasers

Conveniently, Halloween falls on a Friday this year, making it the perfect opportunity to throw a ghoulish soiree. Whether you’re hosting friends and family, or your entire block, here’s a few healthy –and kid friendly – appetizers to add something paranormal to your party.

Devilish Eggs
Give the illusion of mysterious eyes watching your guests with a plate of sinister, yet delicious, deviled eggs.

  • 10 eggs
  • 1/4 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 roasted red pepper, rinsed and dried
  • 5 black olives, cut into 1/8 inch rings
  • pinch of salt

Directions:

Place eggs in a large pot and cover with cold water. Cover pot with a lid and bring water to a boil. As soon as water has boiled, turn off heat. Let eggs sit, covered, for 10 minutes. Drain eggs and let cool slightly. Peel eggs and cut in half. Carefully scoop yolk from eggs and place in a medium bowl. Add mayonnaise, mustard, and paprika to bowl. Stir to combine. Season with salt to taste. Divide filling among egg halves. Top each egg half with an olive ring- this will serve as the pupil. Slice the red pepper as thinly as possible. Arrange a few red pepper strips around the olive to resemble veins. Repeat with remaining eggs.

Monster Munch Popcorn
A Halloween party isn’t complete without something fun for the kids to munch on, that’s not too sugary in comparison to all the loot they’ll collect trick-or-treating. This fun and easy appetizer is mom – and monster ­– approved.

  • 5 cups air-popped popcorn
  • 3 tablespoons honey
  • 4 tablespoons natural peanut butter
  • 3 tablespoons mini semi-sweet chocolate chips

Directions:

Mix together popped corn and chocolate chips in a large bowl. Fill a smaller bowl with ice and water and set aside. In a small saucepan over medium-high heat, stir together honey and peanut butter until bubbling. Pour the honey peanut butter mixture over the popcorn and chocolate chips, and combine well with a spatula. Dip hands in ice water and roll popcorn into 2-inch balls (dip hands in ice water in between balls). If your popcorn ball becomes too fragile, dip it in the ice water briefly and then reshape it. Once all the balls have been rolled out, place them on a sheet of parchment paper to cool.

Pumpkin Dip Bowl
Given all the sweets and treats that emerge during Halloween, balance things out with a fun and healthy veggie platter. Pick up an extra pumpkin, carve a lid in the top and scoop out all the innards. Then pour in your party dip and surround the pumpkin bowl with cut carrots, bell peppers, cucumbers and any other vegetable with a Halloween hue. Something nutritious to balance out all that candy corn.
