Have you ever picked up a rotisserie chicken from your local market, say for a dinner for two, and realized just how much meat is left over? Maybe you’re a master griller and you’ve roasted the bird on a rotisserie yourself (well done)? Either way, there always seems to be leftovers, which can translate to a pretty tasty chicken dish parte deux.

With the last long weekend of summer fast approaching, we trust you have some backyard parties to host or attend. So the following tips might fair useful, should you end up with a surplus of savoury chicken this Labour Day weekend.

Capitalizing on late-season fruits and veggies like apples and arugula in the north, pears and sweet peppers in the south, we found a few quick and easy salads to impress your hosts (read, show up your neighbor):

Chicken, Black Bean, Avocado, and Radish Salad with Lime and Cilantro

BBQ Chicken Nachos

For something more snackable and kid-friendly, nachos are easy to whip up and always a crowd pleaser. You could definitely sneak in a few extra veggies like tomatoes or maybe an avocado, but we dig Lauren’s no-fuss simplicity.


Skinny buffalo chicken chili

If you’re hosting a large crowd, you’ll want something that scales. Try boiling up a big batch of chilli using your leftover chicken instead of ground beef. Toss in a ton of nutrient dense ingredients like celery, carrots, cauliflower and garlic gloves to offset the long weekend libations. The Skinny Fork does it well.
