Spicy Pumpkin Seeds Recipe

One of the most fun and delightfully messy traditions this time of year is carving jack-o-lanterns to decorate your front porch for Halloween. Whether your pumpkin will transform into something scary, goofy or artful, the first step is removing all the slimy innards and seeds. But don’t toss those seeds away – wash, dry and transform them into a tasty snack.

After your pumpkin is carved and placed proudly for your neighbors and passers-by to admire, kick back and reward yourself with toasted pumpkin seeds. A good source of zinc and vitamin E, here’s one way to spice them up:

Ingredients: Spicy-Pumpkin-Seeds—Martha-Stewart-Luvo2

  • 1 cup raw green pumpkin seeds
  • 1 teaspoon chilli powder
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon coarse salt
  • 2 teaspoons fresh limejuice

Directions:

Preheat oven to 350 degrees. In a medium bowl, combine pumpkin seeds, chilli powder, cayenne pepper, coarse salt, and fresh lime juice; toss to coat. Spread on a rimmed baking sheet; bake until puffed and browned, about 10 minutes. Source: marthastewart.com
