Watermelon Grapefruit Mojito

The perfect mojito should be refreshing and well balanced, not overly sweet or sour. This recipe has the perfect amount of both:

Ingredients:

  • 1 large grapefruit, no skin no pith, just the pulp
  • 2 cups ripe watermelon, cut in small cubes
  • 1 lime
  • 1/2 cup of superfine sugar
  • 1 bunch mint
  • Light rum
  • Club soda (to serve)
  • Crushed ice
  • Grapefruit twist and mint

Method:

For each cocktail, do the following:

  1. Pick your favorite tall glass muddle a couple slices of lime, a couple sprigs of mint, about 2 tablespoons of grapefruit pulp, 2 tablespoons of watermelon, and 1 teaspoon of sugar (adjust if needed). Muddle until sugar has dissolved completely.
  2. Pour 1 ½ oz. of light rum in the muddled mix and stir
  3. Add a handful of crushed ice and top with club soda. Garnish with grapefruit twist and sprigs of mint leaf. Serves 4
