Watermelon Grapefruit Mojito
The perfect mojito should be refreshing and well balanced, not overly sweet or sour. This recipe has the perfect amount of both:
Ingredients:
- 1 large grapefruit, no skin no pith, just the pulp
- 2 cups ripe watermelon, cut in small cubes
- 1 lime
- 1/2 cup of superfine sugar
- 1 bunch mint
- Light rum
- Club soda (to serve)
- Crushed ice
- Grapefruit twist and mint
Method:
For each cocktail, do the following:
- Pick your favorite tall glass muddle a couple slices of lime, a couple sprigs of mint, about 2 tablespoons of grapefruit pulp, 2 tablespoons of watermelon, and 1 teaspoon of sugar (adjust if needed). Muddle until sugar has dissolved completely.
- Pour 1 ½ oz. of light rum in the muddled mix and stir
- Add a handful of crushed ice and top with club soda. Garnish with grapefruit twist and sprigs of mint leaf. Serves 4
